Coconut Pumpkin Paleo Pancakes


  • 1 tbsp melted coconut oil
  • 2 cups organic pumpkin puree
  • 2 eggs
  • ¼ cup coconut milk
  • 1 cup coconut flour
  • ¼ cup ground flaxseed
  • ½ tsp apple cider vinegar
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • ½ tsp cinnamon

Preparation Instructions

1. In a mixing bowl, whisk together the dry ingredients.

2. In a separate bowl, whisk wet ingredients. Combine both and stir.

3. Over medium heat, drizzle coconut oil on the skillet.

4. Scoop the batter into pancake-sized shapes.

5. When golden, flip to other side.

TIP: Coconut flour is a delicious, high-fiber baking alternative to grain flours. Our favorite is Bob’s Red Mill Organic Coconut Flour. Find it online at Amazon or Walgreens.

Nutty Almond Paleo Pancakes


  • 1 ½ cups ground almond meal
  • ¼ cup almond milk
  • 3 eggs
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • ¼ nutmeg
  • ½ tsp baking soda
  • ½ cup applesauce

Preparation Instructions

1. Stir dry ingredients in a mixing bowl.

2. Whisk wet ingredients in a separate bowl. Combine dry and wet together, stirring until smooth.

3. Grease pan with coconut oil at medium heat.

4. Pour batter in shapes 2-3 inches across.

5. Cook until golden brown then flip.

TIP: Almond meal and almond flour can be used interchangeably, so use whatever you have.

Chocolate Chip, Banana, Almond Butter Paleo Pancakes


  • 2 eggs
  • 2 bananas
  • ¼ tsp vanilla extract
  • ¼ tsp baking soda
  • 1 tbsp almond butter
  • ¼ tsp sea salt
  • 1 handful of chocolate chips
  • 1 tbsp coconut oil

Preparation Instructions

1. Mash bananas in a small bowl.

2. Whisk together eggs, vanilla, baking soda, almond butter, salt, and chocolate chips.

3. Add bananas to the mixture.

4. Apply coconut oil to griddle and put on medium-low heat.

5. Pour batter into dollops 3 inches across.

6. Cook for 4 minutes then flip.
